My brother introduced me to Good Magazine a years or so ago and the previous issue (Issue 17) had a really user friendly article on preserving.
Like many mums and grandmothers mine all did heaps of preserving when I was young but we are talking about hardcore preserving with big boiling drums and massive amounts of fruit - way out of my league.
The Good magazine article made the whole exercise seem suited to a small batch metropolitan operation which suits my apartment dwelling needs.
My 7kg haul of pears became just 4 jars once pealed, cored and cooked so I'll definitely have to have another crack at it on a future cold Wellington weekend if I am to be well stocked for winter.
The small jars are pears poached in cinnamon, cloves and fresh ginger. I had a few left that didn't quite fit in the jar and they created gustatory magic when matched with the ewe's milk cheese I got from City Market in the morning.
